A super simple 4-step traybake that is sure to make Chicken Tikka a new family-favourite.

Chicken Tikka Traybake Recipe

Ingredients:

  • 1 lb (450g) chicken thighs or breasts, cut into chunks
  • 1 cup plain yogurt
  • 2 tablespoons tikka masala paste (or a blend of spices including ground cumin, coriander, turmeric, and paprika)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 lemon, juiced
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 large red onion, cut into wedges
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • Fresh cilantro, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

1. Marinate the Chicken:

  • In a large bowl, combine the yogurt, tikka masala paste, garlic, ginger, lemon juice, salt, and pepper.
  • Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or overnight for more flavor.

2. Preheat the Oven:

  • Preheat your oven to 400°F (200°C).

3. Prepare the Traybake:

  • In a large baking tray, drizzle the vegetable oil evenly.
  • Arrange the marinated chicken pieces on the tray.
  • Add the red onion, red and yellow bell peppers, and zucchini around the chicken.

4. Bake the Dish:

  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. You can turn the chicken and vegetables halfway through the cooking time to ensure even cooking.

5. Serve:

  • Garnish with chopped cilantro and serve with lemon wedges on the side.
  • Enjoy with naan, rice, or a simple salad.
